i am looking for a profile that recreates an acoustic guitar... western guitar... any recommendations. And yes... i want to use an electric!

Have you tried the Acoustic Simulator in the EQ section? Also Compression, EQ and Reverb should you bring in the right direction.
Second idea could be searching for free Acoustic IR's and give them a try.

Use the Kemper Acoustic Sim with a compressor if front and a EQ after (and maybe even a compressor after that if needed). Comp > Acoustic Sim > EQ > Comp. Make sure Amp and Cab are off. If you record in DAW, make sure to record the DI track and then you can blend that in with the acoustic track to get more convincing tone.
Use a neck pickup single or split or middle pickup.
